My name is Ajay Kilambi, a home-cook from Tulsa, Oklahoma. Veg Wonders started as my home vegetarian restaurant. With all the recipes I've put together, I hope to share them with you all! Enjoy my global vegetarian recipes, a group of simple and delicious wonders.
Growing up, I learned the art of using the stove from my parents. As I showed an interest in learning how to cook, my parents started teaching me how to cook certain Indian dishes. These experiences developed the ease and flow in which I started to cook with. Sometimes there would only be ten minutes to whip up a dinner. I learned to be more creative and efficient with the dishes I produced. Even if it was a dish I had never made, my dad would urge me to get in the kitchen and try to make it. “Just try! Whatever happens, happens!” he would call out. Going to India and learning from my grandparents has been just as impactful. Watching the traditional ways in which spices were used allowed me to understand the depth of flavor which can be brought out in a dish. As my parents became confident with my knife skills, I was allowed to venture off on my own. I dove into European and Mediterranean cuisines and learned their techniques and styles. Dealing with flavors from a vast geographical range allowed me to really get a sense of the cultures of different areas. Cheese, being completely different in many different countries, was one of the greatest adventures. Mozzarella to Pecorino to Sulguni to Paneer changed my perspective on how one ingredient – milk – could be turned into so many flavors, shapes, and uses. Events such as the first-time making fettuccine from scratch or making a chocolate mousse led to more exciting creations. The vast nature that cooking has brought started back in a small Indian home in Tulsa, Oklahoma.
My recipes incorporate a variety of flavors ranging from Indian to Italian to Mediterranean. I have always loved the fact that most of these dishes take no more than twenty minutes to make.
Some of the most powerful tools under any cook's belt is the ability to use spices and herbs to their advantage. Cumin, mustard seeds, turmeric, chili powder, coriander seeds, and other spices from India and garlic, basil, thyme, and sage from Italy and the Mediterranean can have the power to elevate a dish like no other.
Being vegetarian , or at least limiting your meat intake, allows you to feel energetic even after the most filling meal. Limiting animal products is a sustainable way of living and can also improve your longitivtiy.
